INGREDIENTS

  • 1 pound ground venison
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon crushed red pepper flakes (adjust to taste)
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 cups marinara sauce

DIRECTIONS

  1. In a large bowl, mix together the ground venison, breadcrumbs, milk, egg, chopped onion, minced garlic, salt, black pepper, red pepper flakes, and chopped parsley. Be careful not to overwork the mixture to keep the meatballs tender.

  2. Roll the meat mixture into 1-inch balls, and set them aside on a plate.

  3. Heat the olive oil in a large skillet over medium heat. Add the meatballs, and cook until they are brown on all sides, about 5-7 minutes. You may need to do this in batches to avoid overcrowding the skillet.
